AIP Leek and Sweet Potato Soup


This was the best thing I ate all week! It is so tasty, creamy and satisfying while being quite simple and 100% Autoimmune Protocol compliant. This is real food at its best. I adapted the recipe from here.

Leek and Sweet Potato Soup

2 slices pastured, sugar-free, nitrate-free bacon
1 1/2 c leeks, sliced (whites and just a bit of the light green parts)
1/4 tsp sea salt
2 c. beef bone broth
2 c. raw, diced, peeled white sweet potato (any color skin, but flesh should be white)
1 Tbsp fresh thyme leaves
6 oz coconut milk

Fry the bacon until crispy; drain and set aside, saving 1 Tbsp bacon grease. Saute the leeks and half the sea salt in reserved bacon grease until soft, about 10 minutes. While that's cooking, put the broth, the rest of the salt, sweet potatoes, and thyme in a pot and bring it to a simmer. Add the leeks and bacon grease, cover and simmer for 15-20 minutes, partially covered, until the potatoes are soft. Cool slightly and carefully blend with an immersion blender until smooth. (You can use a regular blender if you cool the soup to just warm). Add the coconut milk and warm through. Crumble the bacon and sprinkle over each bowl when serving.



This made two bowls of soup for me. It's really delicious and nourishing! I'll be making this one again and again. Hope you enjoy it too!

Sounds really delicious. The longer I eat like this (and I am on a somewhat less restricted regime than you are doing right now), the more I just love all of the Paleo type foods. I am not exactly sure what is on your list, but mine is: no grains, no sugar, no fruit (except berries), no root vegetables except sweet potatoes, beets and some carrots, but I can have eggs and a little cheese, and almonds, and good fats and a small amount of beans. I feel much better than I used to. I have been doing this since last April and it has made my life much better. Thanks for sharing the recipe.
