I am feeling excellent today. There is nothing like spending the morning with your hands in a pile of fresh vegetables! This morning I steamed a bunch of fresh asparagus (and ate a few pieces as I worked), chopped half a cabbage and steamed that (and had a bite of two! This is one time I feel good about the little bites and tastes when I am cooking), and chopped fresh onions, chard and beet greens to simmer in a pot with chicken broth and chicken sausage (this was my lunch). I also washed a huge batch of salad greens and now they are clean, dry, and ready to eat in the fridge in my salad spinner bowl. I also peeled and ate an ataulfo mango... yummy. Later I will prep a bowl of cucumber dill salad (with fresh local dill) to go with whatever protein I end up making for dinner (fish, maybe?) I feel great knowing that there are ready-to-eat vegetables just waiting in the fridge for when I am hungry. Makes it much easier and faster to get the produce in!
I feel like I have gone 'back to my roots' to the time when I started this blog and based all of my meals around what produce I could get at the farmer's market. Of course, back then I was also still eating grains like brown rice, wheat bread, and oatmeal... and still ate way more sugar than is healthy. I don't eat any grains now except for the minuscule amount found in some Medifast meals, like the bits of rice in the chicken and wild rice soup or the tiny amount of oats in the oatmeal. I try to choose the gluten free meals as often as possible. I drink lots of water, no soda, no artificial sweeteners except, again, the ones in the Medifast meals. When I get to a maintenance weight I will phase out the 4 Medifast meals I eat each day. Not sure what I will eat in their place, but I have time to figure that out.
I'm off to ride my bike! Then I have some sorting and organizing to do.
Time to HIIT it?
