Yesterday was Day 1... not of any diet or weight loss plan or anything like that. I've had plenty of those! Yesterday was Day 1 of April! Silly for me to point this out? Nah. I am looking at my weight loss progress and health improvement in units of months now. I no longer *just* judge my progress by how much weight I lose or don't in a week; I am training myself to see a bigger picture of months and years. And each new month is like a fresh recheck. It's a time to look back, evaluate what worked and what didn't, and renew efforts towards bettering myself.
Yesterday was a very good day.
7am: black coffee
8:30am: Medifast cereal with almond milk
10am: Medifast hot cocoa
noon: 3 devilled (Easter) eggs made with light mayo, mustard, salt, pepper and paprika with a cup of steamed asparagus
3pm: Medifast shake
6pm: Medifast macaroni and cheese with 1/2 cup of asparagus
8:30pm: Medifast chocolate chip pancake, made into a muffin in a coffee mug in the microwave
I'm not sure yet what's for dinner tonight... maybe some baked fish and a salad. I am going to make split pea soup for my kids using this recipe. I may also make a pot of low carb "split pea" soup (with no peas) for myself, but freeze most of it in portions for future use. I can't think of any better use for a leftover Easter ham bone!
