I had a great trip today and am writing from my darkened hotel room, my little girl and dog fast sleep on either side. I just wanted to give an update on how my eating went.
I mainly waited until I was hungry to eat and stopped when I was full. Simple, but very very hard for me to do when I am eating carbs. I always want more carbs, always seem to be hungry and very rarely feel full. But I think I have found my nutritional 'groove' as my stats are trending towards certain numbers I see repeated when I feel well.
This morning was chaotic as I was trying to gather all the last minute forgotten things for the trip and get out the door in time. I almost forgot to eat breakfast (after black coffee) but then grabbed a leftover sausage patty on my way out the door. That held me over until we took a road trip break at a rest stop, when I had coffee with half and half and some soy chips. Later, lunch was eaten from the cooler at the dog event: lean ham, cherry tomatoes, snap peas, and my very favorite cheese (dill Havarti). I drank water and felt great! About four hours after that I got quite hungry and had a few pistachios and a chocolate protein shake I had brought along, and then dinner (out) was a mixed green salad topped with grilled chicken, hard boiled egg, bacon, and blue cheese. It was super good. I had a few more soy crisps in the evening. I am completely satisfied, feel great, and my energy is improving.
