The weekend is going well. I got lots of errands done today and will be going swimming with my daughter tomorrow. My plantar fasciitis is almost gone at times and excruciating at others. My eating is under control, moderate and healthy. Today we went to the Farmer's Market for some grass fed beef, yellow squash, and zucchini. I wanted to get cabbage and green onions, too, but there were none so I stopped by the grocery store for those. I'll be making something called "Crack Slaw" for dinner tomorrow and if it is good, I'll share the recipe! Yesterday I made a huge batch of Cauliflower "Potato" Salad and ate half yesterday and half today. That, along with salad, free range eggs, roasted pork, fresh locally made goat and sheep cheese, nuts, seeds, veggies and protein shakes are making up the majority of my intake. I've been using unsweetened almond milk in place of regular milk and am staying nearly grain-free. I feel stronger already with the strength training I've been doing, and I plan to get back on the scale next Sunday to see what's going on there. For now, I am just enjoying the ride.
