Primal Scramble, and Feeling Good!

I feel energized today. I like this Primal thing. I think *any* diet that focuses on whole, fresh foods including lots of veggies is a good thing, but including more healthy fats has been so satisfying. I had gotten used to limiting my fat and fruit intake quite a bit over the past 2 years of low carb eating, and it is really refreshing to enjoy things like avocado, watermelon, and apples again. So far I don't even miss the grains and sugar.

This morning I had a rather non-traditional breakfast. I put an egg in the blender with some leftover baked sweet potato, almond butter, almond milk, baking powder, and cinnamon. I whipped it up until it was the consistency of raw beaten egg, and then poured it into a hot pan coated with a bit of coconut oil. After it started to set, I gently scrambled it. And yes, it was *really* good... sweet, a bit pancake-y and not very eggy. I got this idea over the weekend as I was browsing Paleo and Primal cooking blogs. I saw tons of recipes for gluten-free sugar-free breads, muffins, and pancakes and a lot of them contained the ingredients I listed, and some had no flour of any kind. So I figured it might work. It did, and was very satisfying.

After breakfast, I roasted chicken thighs along with broccoli and beef bones. Now the cooked thighs are in the fridge for quick snacks and the beef bones are in the crock pot with a bit of apple cider vinegar and lots of boiling water to make a long-and-slow cooked stock. I'll add some vegetables near the end.

Lunch was roasted broccoli, sliced raw red peppers, and two hard boiled eggs cut in half and made into deviled eggs. I made myself an iced coffee to go with it and am perfectly satisfied.

Dinner will be mashed cauliflower and some kind of meat or steak and for the kids there will be mashed potatoes and gravy, too. Maybe I will also roast some carrots! Yummy.

Going out for a walk shortly. I am ready to add slow biking back into my routine, but someone took the A/C adapter from my bike! Will have to find that first. And now I am off to plan a birthday party!

I agree that the foods you are eating right now sound nutritious and tasty. There can hardly be anything wrong with eating fresh, wholesome foods on a daily basis. Good luck, and I will be checking in to see how it goes each day. I love reading your ideas and the comments too, and I always learn something. Thanks!

stick to the plan it's working for you just remember that when doin this kind of eating that one bite of........ will trigger b=cravings/binges and bring the weight loss and energy to a crashing halt. you're doin GREAT so it's simply NOT worth it for a momentary thrill.
