Thursday Menu

Today's eats:

oatmeal w/1 Tbsp sliced almonds and 1/2 a banana
1/4 c skim milk
black coffee

4 oz cold leftover salmon mixed w/2 Tbsp Greek yogurt, lemon juice, dill, onion, celery, and pepper
6 Wheat Thins

1/2 c nonfat Greek yogurt
3/4 c fresh local strawberries
large iced coffee w/2 Tbsp half and half

2 slices of really good pizza (toppings: red onions, green onions, tomatoes, pineapple, ham, bacon, & cheese)
2 small plates of salad (Romaine, Iceberg, cucumbers, broccoli, mushrooms, tomatoes, hard boiled egg whites, bacon bits, 1/2 c peas) w/3 Tbsp blue cheese dressing
4 oz tart frozen yogurt topped with 1/3 c mixed fruit (blueberries, strawberries, raspberries, sliced kiwi)

Total for today: 1769 calories

It takes extreme self control to eat smaller portions like your dinner shows. Great job!

Is there a medical need for you to eat low-fat? If not, you might consider going to moderate fat. Like stirring an actual egg into your oatmeal instead of just the whites. Or a tablespoon or two of peanut butter or almond butter.

The "low fat" paradigm for health is pretty much dead now, from what I understand. Now the emphasis is sticking to healthy fats.

I always found low-fat eating so unsatisfying. I now eat 35-40% (up to 43% some days) of my calories from fat, and at least 25% of calories from protein. I find that a much more satisfying and tasty combination, even on fewer calories.

40% of the calories in this menu came from fat. I don't aim to eat low fat, but I do see that I need more GOOD fats like avocado and olive oil in this particular day and less unhealthy fats like the salad dressing. I was very satisfied, though, and went to bed without an evening snack :)

Have you tried the Kefir Blue Cheese dressing found with the cold salad dressings in the produce section? Yum, real food and naturally low cal.

The Kefir Blue Cheese dressing is a Lighthouse brand. Do you have these where you live? The actually call it a yogurt dressing, but it is Kefir that they use.
