Crock Pot Chicken Taco Soup

I'm doing well today, eating right and staying on plan. I thought I'd share a recipe I made for dinner tonight; it's low carb, healthy, and delicious! This is not my recipe; it came from Sandy's Kitchen, which is a really great recipe site I enjoy. Crock Pot Chicken Taco Soup

2 cups reduced sodium chicken broth
2 cups water (I think I will use a little less water next time, maybe 1 3/4 cups)
1 cup Rotel diced tomatoes with green chiles
1 teaspoon taco seasoning
1/2 teaspoon cumin
1/4 teaspoon chili powder
1 clove garlic, minced 
13-14 oz raw chicken breasts  (I used frozen ones, because they come out very moist in the crock pot)
2 cups cabbage, chopped

Combine all of the above in the crock pot and cook on low for 6-8 hours. Mine was done in 5 hours. Remove the chicken breasts from the soup and shred the meat with 2 forks. Return it to the soup and stir.

Ladle into 2 bowls and top each with 1 ounce of Kraft 2% Mexican cheese to garnish.

Makes 2 large servings. Each counts as 1 complete Medifast Lean & Green with 3 condiments. I am freezing the second portion so I can have a nice, easy dinner sometime next week that just needs to be reheated. Enjoy!

I LOVE THIS SOUP! I have never had it with cabbage, and sadly I do crush a few too many tortilla chips into it! MMMMMM!

How do you figure out what adds up to a "whole" condiment and what all vegetables and leans you can sub out with cheese and stuff? I haven't seen mentioned ANYWHERE in my info

I wish Medifast would make this easier to find! If you go to and look under the Success Tools tab under Eat Right, click that. Then look on the left side and there will be a condiment guide, green options guide, meatless options guide (this is where the cheese is found) etc.

Made this soup today after seeing on your website over the weekend. I am not a cabbage fan, but did it anyway. Added a teaspoon of sour cream when it was done, and just a bit of cheese (not much) and this soup was awesome! Even the cabbage part. Thanks for sharing this!

I've just started my medifast 3 days ago. Found this recipe and became excited. I don't like very many vegetables so I thought I was going to be eating a lot of grilled chicken salads for my lean and green. I've just put this in the crockpot. Can't wait to taste it!
