Update, and Coconut Oil

I feel *so much* better today! I know you have heard me say it a million times, but I am always amazed at how strongly my mood and my level of difficulty staying on plan with my eating correlate with my monthly cycle. Once again, I am in the first half of my cycle, all is well, it is easy to stay on plan and eat right. I feel happier and brighter. I know in about 2 weeks it will get hard again, but I am doing everything I can with the good days, which will build momentum for the harder ones.

I also have a new food I am incorporating into my diet, and that is coconut oil. I've heard and read much about the benefits of coconut oil (here is one interesting short article, with much information all over the web if you Google 'coconut oil' as well), so I purchased some the other day. I am a big fan of Barlean's products and use their fish oil every day, so naturally I bought a jar of Barlean's organic, fresh extra-virgin coconut oil. I love it! It is a solid at room temperature and it tastes like fresh coconut (but is not at all sweet... it is a fat). It is high in calories like any other fat (125 calories per tablespoon) but healthy fats are essential to good health, so I am using small portions in place of butter or other oils when I cook. I also tried eating one teaspoon of coconut oil when I was hungry and it kept me satisfied for a long time. I am going to try it as a facial cleanser/moisturizer as well.

Not much else going on, just eating on plan, getting ready for Christmas, and getting the house cleaned up. Down another pound today to 180.

I don't know if they are related (actually I'm sure they are related because they are both from the coconut!) but I had coconut milk for the first time today. So yummy over my rice and veggies.

Coconut oil is a staple at my house. You are going to love it as a moisturizer too. I will never buy lotion again, NEVER

I have had a thing of coconut oil that I haven't touched. Maybe I'll finally open the jar.

Just make sure the coconut oil you use is extra virgin, organic and cold pressed. Dee McCaffrey (if you have heard of her) is an organic chemist and diet counselor (Plan-D, the amazing anti-diet) and states that c oil contains a high amount of lauric acid, the same substance found in mother's milk which strengthens the immune system and has many healing properties. She says the ability of coconut oil to promote weight loss is miraculous. And it is a fat that will not make you fat or gain weight. When you use it for frying it is not absorbed into the foods so does not contribute extra calories to foods. I'm quoting from her book.

We love coconut oil and I use it almost exclusively when oil is called for. Sometimes I have to melt it to put it into things (like muffins) but we use a lot of it here. I also use it to make soap!

I had coconut oil for the first time a couple months ago, and it was really good. Kind of hard to find in my area though.

Have you ever read the book "SKINNY BITCH" In there she talks about coconut oil..I dont remeber everything she said about it. But if you want i can go back and look.Anyways I bought the 2 book set. So one of them also has recipes. The first one I looked at was one that had coconut oil. Can you get it at any store or a health food store?

Yeah, same here... I used to crave chocolate and salty snacks, but I successfully substituted these... with broccoli and the occasional extra piece of meat. Funny how that works. Chocolate replaced by broccoli... never thought it would happen. (^v^)

We use coconut oil too. My husband's cholesteral actually went down when I started using it and it has as much saturated fat as butter. I would love to read about what think of it as a moisturizer. I've been wanting to try it but am afraid I'll feel all greasy like I'm trying to lay out and get a tan.

The books I have are written by Dee McCraffey and more information can be found at www.processedfreeamerica.org
There is also a lot of podcasts on lots of different subjects, I saw one on coconut nectar and probably are more on coconut oil, I just haven't searched that far. She is a lady who has lost over 100 lbs and kept it off. She is an organic chemist and diet counselor.
