For the Love of Kale

Second post today... OMG I am just DYING to eat the house today. I don't know what's come over me, but I am hungry hungry hungry!! I am *not* craving junk, I am *not* going nuts for a binge, but my hunger level went through the roof. I think it may be related to my cycle. It's a handy scapegoat, anyway.

In order to satisfy my crazy desire to fill my stomach (which feels like a bottomless pit no matter what I eat), I have a huge pot of kale simmering on the stove. I tore the big bunch of raw kale into pieces and removed the tough stems. I simmered it for 5 minutes in salted water and then drained it (kills the bitter, even though some vitamins leech out). Then I sauteed half a sweet onion and a garlic clove in a half Tablespoon of olive oil, threw in about 4oz of ham (cubed up tiny), 2 thin slices of pre-cooked, 40-calorie bacon (chopped), some salt, pepper, red pepper flakes and a cup or so of water. I've had it on low all afternoon (3-4 hours) and soon... very soon... I am going to dive in with a fork. I am going to eat kale until I am absolutely FILLED. This empty feeling is driving me nuts, and even if I eat the WHOLE pot of kale (which is likely a physical impossibility), it only has about 420 calories. I'll be well within my calorie limit for today.

Well, as I was blogging my intense hunger overcame me and I went and got a bowl of kale. OH MY GOSH. Sooooo good. If you like greens you will *love* these. If you hate greens, you will *love* these! So tender and flavorful, better than ANY junk I can imagine. In fact I *may* eat the whole pot! I sprinkled it with a bit of Balsamic vinegar.

I don't really understand this kind of weird hunger I am feeling. I have it every once in awhile but not often at all. It's real stomach hunger but I can eat and eat and still feel hungry for a long time. I've tried drinking lots of water, that doesn't do it. It isn't a craving and it isn't a "want to eat" thing. I just can't seem to get full. Oh, if I eat *enough* volume I do finally feel it, but it's almost like the switch isn't working. You know that switch that your brain flips to tell you you're full? It just doesn't work at times like this. Very odd. But I am aware of it so I tend to cook a big pot of soup or veggies or something to eat until the switch FINALLY flips (which is after quite a large amount of food). Maybe it means I am about to drop some pounds! We'll see.

I took my daughter out for a walk today. It was very nice out and I probably got in about 3/4 mile. If I feel up to it, I'll bike this evening. Enjoy your night!

Oh, I love kale! Always have!

I like it lightly stir fried until just wilted, but soup also sounds good. I'll have to try that sometime.

At any rate, what a good way to beat the hungries! Awesome!

My dad made me eat the canned stuff when I was a kid and I never got over the horror of it. :D

I will try it again and report back to you.

I know those crazy can't fill myself food days too.
I do think it's related to our cycles. Our bodies go through a lot at that time and it needs more fuel I think. Sounds good to me anyway.

THE kale looks good. I am a southern girl and raised on greens. Ummh good!

I am having one of weeks of being hungry all the time. I think it is I have been commuting so much I have not had a "real meal" in quite a while.

I've been reading a lot about how satiety is more in the mind and hormones than in the stomach. The stomach has something to do with it but not as much as people think, and it's easy to ignore it when your body is doing crazy thins to hormones.

At least you have a game plan though with the kale!

You know, I don't think I've ever tried kale. I've always been a big broccoli eater. But I shall have to try it; I have several recipes that sound good.

I think that this hunger thing might be related to the weather. All I seem to want to do lately is stuff myself silly with extra servings and such.

Good job on filling yourself with something healthy!

I'm really big on veggies, but I haven't tried kale. Must do so.

I think that horrible hunger in the pit of your stomach is hormonal. I get it too from time to time. It is real hunger, nothing to do with emotions, boredom...It's real. I guess the trick is to try and fill it up with good food instead of junk.

OMG that looks SO GOOD! I need to get me some kale! I am also fascinated by kale chips, want to make those soon too. If it's any help, I eat HUGE quantities of salad greens and vegetables, because I like to eat A LOT but don't want to overdo on the high calorie stuff. :)

I do this with green beans and then eat them slowly one by one with my fingers. I have also done this in the car with brussel sprouts. I know the feeling. Dr Oz was just talking about squeezing a lot of lemon on greens to take away the bitter.

Try to think out anything that might be bugging you in the tiny corner of your mind that you can hardly see at all.... sometimes it is what causes the hunger. My DD went through tests for stomach problems. She said all was fine at school etc. Turned out to be the fact that she was entering a new school.... high school. Once she went the tummy troubles went away. She never even thought it was bugging her. The kale looks super yummy.

What a smart way to deal with those weird hungry days when you can't seem to get enough to eat!

I get those too, and for me I'm pretty sure it's hormonal.

Will have to try your kale recipe, it sounds fantastic!

A friend told me that when you feel that empty stomach hunger acutely, know that you're losing weight. I don't know if it's true, but it makes the suffering purposeful and noble! I'm having kale and onions for lunch today! Your's looks awesome...next time I'll toss in some ham.

I have only used kale in my green monster smoothies. It honestly scares me because I have never eaten it any other way than in a smoothie.

I guess that can be a new veggie experiment for me. Your kale dish looks delish and just might be my first true kale experience! LOL

I have been all over a spicy-greens recipe from my Runner's World magazine: saute a sliced jalapeno & a little garlic in olive oil, add greens & simmer down.
I'll have to try kale next time!
